The Farm
Deerpath Farm is a charming 40 acre property on the Canadian Shield. The location is close to the northern limit of the range of sugar maple in North America and so it provides the setting for a truly unique maple experience. The mixed forest is managed to improve the quality of the forest over time for both the local wildlife as well as the maple trees.
We strive to preserve traditional syrup making techniques while utilizing modern materials that meet OMSPA (Ontario Maple Syrup Producer's Association) food grade standards for the highest quality product.
The sap is collected using a combination of tubing and traditional buckets, which is then transferred to the 2x6 wood-fired evaporator and boiled in small batches. Once the sap is boiled down, it is transferred to a propane-fired finishing pan where the temperature is carefully monitored and controlled. From there is is filtered and bottled.
The result is a maple syrup that is robust and as complex as the Northern forest it came from.
In total, two hundred and twenty-five maple trees are tapped to produce this sweet elixir.
